The touchscreen is programmed by default to return to the home screen after an alarm is set. Unfortunately, it is not programmed to return to the last view that was on the touchscreen prior to a change of state (arming the system). You can, however, set the cameras to be your screensaver when the touchscreen goes into idle, which would bring up the view you're looking for.
There is a maximum of one touchscreen per XFINITY Home system, as each device is paired a single touchscreen during setup.
