You can fix that, by getting what is called a "Keystone" wallplate, and some Keystone jacks for the Ethernet & Coax. If all they did was put RJ-45 plugs on the ends and plugged into the router or switch, you can fix that, by using another Keystone plate and a Deep Single gang Smart box, to place the wires into, and attach the ends to Keystone jacks.
I would stay with 568-A on both ends. The keystones for the RJ-45 jacks come with a punch down tool and a instruction sheet.
